Farm to Glass Mission
This fall we will start distilling on-site, grains from our farm.
We will grow, mill, distill, and age it on the same land. The work will be harder but the whiskey is better. That's the only difference that matters.
Whiskey that goes from field to bottle
Long before whiskey became big business and "independent bottlers" would blend multiple distillers whiskeys and varied mashbills together, whiskey used to stand on its own. Great whiskeys are grown, distilled, aged and bottled on the same land to capture its sense of place, its terroir. This is how exceptional whiskey is made: From the land, one mashbill and one cask at a time. With our first on the farm distillation this fall, this is the exciting journey we are embarking on.
Vermont's only Estate Whiskey Alliance member
We are proud to be Vermont's first and only Estate Whiskey Alliance member. As a member we are under very strict guidelines. All production, including milling, cooking, fermentation, distillation, barreling, aging and bottling will occur on our estate farm distillery. Our mashbill has to be grown on estate-owned or controlled land.
Terroir that tastes like Vermont
Our bourbon whiskey is farm grown, capturing the true terroir of the Champlain Valley’s ancient seabed soils. Every element, including the grain, the soil, the water, the region and the climate-shapes the final character of the whiskey with the unmistakable imprint of its origin. This fall, we will release our first bourbon, made from Vermont grown grains and distilled under our direction at Old Glory Distilling in Tennessee. This fall we will also, move to distilling on our farm, to begin our Vermont “Farm to Glass” whiskeys.
